The McSpicy, sold four ways

The McSpicy is a thick cutlet of chicken thigh in a crisp coat, and the heat comes from chilli rather than from a sauce. The official copy runs “a thick, juicy cutlet of chicken thigh sits fiery hot on a bed of crunchy lettuce between toasted sesame seed buns” and then adds SINGAPORE’S SIGNATURE BURGER in capitals, which is not a claim McDonald’s makes lightly about a local item. From there the line splits three ways: a Double with a second cutlet, a version with melty cheese, and a Double with Cheese doing both at once.

If you want the thigh without the chilli, two other burgers use the same cut. The McCrispy puts a whole-muscle thigh patty in a new crispy batter on potato buns with a smoky sauce, and the Buttermilk Crispy Chicken comes with white cheddar, whole leaf lettuce and black pepper sauce, which is a sauce you’d normally meet on crab in Singapore rather than on a burger.

Chicken McCrispy, by the piece or by the box

Chicken McCrispy is bone-in fried chicken, and it comes in two coatings: Signature, which the menu describes as a non-spicy, extra crispy batter, and Spicy. Each is sold 2pc and 6pc, a 6pc Mix box puts both in one order, and every 6pc box has a bundle version that adds fries and drinks. The site lists the 6pc boxes as available after breakfast hours and while stocks last.

One caution if you’re ordering a bundle: the Signature and Spicy bundle pages on McDonald’s Singapore’s own site carry descriptions that look swapped as of this check, so ask at the counter what’s in the box rather than trusting the web copy. Elsewhere on the chicken list, McWings come 4pc, Chicken McNuggets come in 6, 9 and 20 piece servings, and a Happy Sharing menu boxes them together. Happy Sharing Snacks is 8pc wings with 20pc nuggets, three medium fries and three apple pies, and two Happy Sharing Boxes pair nuggets with wings in smaller counts.

No pork, and the muffins are wholegrain

McDonald’s Singapore is halal, so pork doesn’t appear anywhere, and the menu copy doesn’t leave you to work it out. The Sausage McMuffin is chicken sausage. The Big Breakfast lists chicken sausage on the plate. The Egg McMuffin, which almost everywhere else is built on ham, says chicken ham in the description, and so does one of the two breakfast wraps.

The second thing to notice at breakfast is the bread. The muffins are wholegrain, and the site names them that way in the meal listings, down to calling the Eat Light versions a Wholegrain Egg McMuffin and a Wholegrain Sausage McMuffin. The wholegrain habit carries into lunch as well, where both McWraps use a wholegrain tortilla. Beyond the muffins there’s a Scrambled Egg Burger on a glazed bun in chicken patty and chicken sausage versions, hotcakes plain or with sausage, and a Breakfast Deluxe that puts hotcakes on the Big Breakfast plate.

Eat Light, a whole category under 500 calories

Singapore’s menu has a section other markets don’t: Eat Light (under 500 calories), sitting on the navigation next to burgers and breakfast. The trick is in the meal build. Instead of fries and a soft drink, the tray comes with a corn cup or a garden side salad and a bottle of Ice Mountain drinking water. The burger itself is unchanged, so a Cheeseburger, Hamburger, McChicken or Filet-O-Fish meal lands under the calorie line on the strength of the sides.

Breakfast has its own set, where a wholegrain muffin sandwich is paired with a junior corn cup and a McCafe Premium Roast Coffee. The Egg McMuffin, Sausage McMuffin, Sausage McMuffin with Egg and Chicken Muffin all appear in that form. Several of the Eat Light images on the site are filed with an hpb tag in the filename, which points at Singapore’s Health Promotion Board, though the menu pages themselves don’t mention it.

Corn cups, Curry Sauce and a strawberry dessert case

The corn cup is a fixture here, in a 3oz and a 4.5oz size, plus the junior cup inside the Eat Light breakfasts. Curry Sauce is the dip to order with nuggets or wings, and the menu is fond of it: a savoury blend of spices with a rich, creamy texture and a hint of sweetness, described on the site as a Singapore favourite dip. Barbeque and honey mustard are the alternatives, and a Roasted Sesame Dressing sits with the sauces for the salads.

The dessert case was running a strawberry range when we checked, and it runs right across the board: a Strawberry Cone, a Strawberry ChocoCone, three strawberry sundaes (Strawberry, Strawberry Hot Fudge and Strawberry Bliss) and a Strawberry Oreo McFlurry, with the vanilla and Oreo originals still listed beside them. McDonald’s Singapore publishes no description for any dessert and doesn’t label the strawberry line a limited run, so treat it as what’s on the board today rather than a countdown.

Less-sugar Coke, Milo and oat milk

The regular Coca-Cola on this menu is Coca-Cola Original Taste Less Sugar, listed in Small, Medium and Large. Full-sugar Coke isn’t on the board at all, which is the sort of thing you notice only when you go looking for it. Coca-Cola Zero Sugar and Sprite fill out the fountain. For background, Singapore grades packaged and freshly prepared drinks A to D under its Nutri-Grade labelling scheme, but McDonald’s Singapore gives no reason for the Coke lineup on its menu pages, so the connection is ours to draw and not the chain’s.

The rest of the drinks list is Southeast Asian. Milo comes iced in two sizes and hot, jasmine green tea and iced lemon tea are both poured in Small and Medium, and there’s a Magnolia low-fat hi-calcium milk from the Singapore dairy. The Happy Meal drink options are the surprise: Kiyo grape juice and Oatside oat milk in original and chocolate, which makes this one of the few McDonald’s menus anywhere offering a kid a carton of oat milk.
