The menu calls it Singapore's signature burger, in capitals, and describes a thick, juicy cutlet of chicken thigh sitting fiery hot on crunchy lettuce between toasted sesame seed buns. It's a whole-muscle thigh rather than a pressed patty, and the chilli heat is the point of the thing.
