Salvadorans changed fast-food breakfast the way Indians changed the patty: by insisting the local plate belongs on the menu. The McCafé board runs espresso drinks, frappés in six flavors, chai lines, smoothies, McFizz sodas and cheesecakes — and at the top, Café Salvadoreño: the house pour in a country whose coffee is exported to the world’s best cafés. There’s a certain statement in a global chain serving the local crop by name.
