Sauces get their own menu category in Colombia, with four entries: sweet and sour, BBQ, ketchup, and maple-flavored syrup. Filing the pancake syrup under sauces is a decision someone made. There is no ají, which is the one thing a Colombian sauce list might have been expected to carry.
