Ensaymada is the Filipino take on a brioche bun: a soft coil of rich dough finished with butter, sugar and grated cheese. Starbucks Philippines describes its version as soft, buttery, cheesy bread topped with parmesan and queso de bola for a dash of saltiness. Queso de bola, ball cheese, is the Filipino name for the Edam in red wax that turns up on the table at Christmas. The site's photo shows the bun under a heavy coat of grated cheese.
